Vitamix Chicken Soup

I was just out of College. And broke. The kind of broke that lives off a diet of Costco sized containers granola bars and Cup of Noodle.

I was making a few extra bucks working for my boss’s wife at a hippie convention. I don’t know what it was called or if it still exists, but I’ll tell you this much:

I was embraced by a woman who said she was an Oracle. Her wooly hair tickled my shoulders and she told me I was love incarnate.

The booth I was babysitting was directly across from a Vitamix display and my roommate and I were brainwashed into buying a Vitamix. Not that we were lousy with Vitamix money at the time. But, it was this recipe, the Vitamix Chicken Tortilla soup that convinced us.

You can augment as you want. I added corn, jalapeño, extra chicken, fresh squeezed lime and avocado to top it off. I didn’t add the tortillas (hence removing that from the name), as it was almost as much calories as the rest of the soup. Here’s to something I’m happy to sacrifice every now and then.

Also, remember taco seasoning is just about equal parts cayenne, chile powder, onion powder, garlic powder, cumin and paprika. So, if you that’s not something you keep in stock, but you have a decent spice collection, there’s a good chance you have most of those things.

Depending on what you add it can be 60-160 calories a cup. Talk about a way to offset your calories for the day. This is a go to.
